Vanilla Ice Cream with Wine Poached Rhubarb

vanilla ice cream

Combine all ingredients, except rhubarb[and ice cream], in a small saucepan and cook for 10 minutes.  Add rhubarb and cook for about 15 minutes.  Let cool. Pour over vanilla ice cream.
