Smothered Pork Chops with Chorizo Thyme Gravy

Don't have a heart attack when you read the ingredients.  This makes a lot of gravy, which is amazing over biscuits for breakfast,especially if you drank tequila the night before.:)  You can also freeze the gravy for future use.

[process]: 

For the gravy: Heat oil in a pot over medium heat.  Add onion and chorizo and cook until sausage is browned. Add Worcestershire and flour, stirring well for 2 minutes. Add cream and half & half and cook for 15 minutes.  Stir in thyme, serrano and green onion.  Continue cooking until sauce coats the back of a woooden spoon. season to taste with salt.

For the pork: Season pork with salt and pepper.  Grill over medium heat until internal temperature registers 160 degrees.
