Chocolate Chip Cookies

This is an adaptation of Thomas Keller's recipe in "Ad Hoc At Home".

Preheat oven to 350 degrees. Line baking sheet with Silpat or parchment paper. Sift flour and baking soda into a medium bowl.  Stir in salt. In a bowl of a stand mixer fitted with the paddle, beat half the butter on medium speed until fairly smooth.  Add both sugars and beat for a couple minutes until light and fluffy.  Scrape down the sides of the bowl. Add eggs one at a time.  Add dry ingredients and mix on low to combine. Stir in chocolate.

Using 2 level tablespoons per cookie, shape into balls.  Arrange 8 cookies on a pan.(They will spread.) Bake for 12 minutes. Cool on pan for 2 minutes. Repeat with rest of dough.
